Salads always need not be just cut vegetables with
some dressing. At my place , sometimes we
do have legume salads like our own sundal. This mochai kottai sundal or
butter beans sundal with the extra addition of the sundal spice powder is very
tasty.

FOR THE SPICE POWDER
Bengalgram

PREPARATION
Soak the mochai kottai in enough water over night
Next day drain the legumes, wash it well, and
transfer it to a pressure cooker. Add 4 cups of water and salt to this and
close the lid. Pressure cook it for 4 whistles. It should cook well but should
not turn mushy. When the pressure is released completely, drain it and keep it
aside.
Dry roast bengalgram dal, blackgram dal, coriander
seeds and red chillies till the dals turn slightly brown. Cool it completely
and grind to a fine powder. Keep aside.
Now heat the oil in a pan, add mustard seeds. Once
it splutters, add asafoetida and curry leaves, saute for few seconds.
Now add the cooked legume, saute for 1 minute, add
the spice powder, mix well cook for 1 minute on low flame and switch off the
fire.
Serve warm
