Strawberry Coconut Smoothie

 SResolution of 2017 like every year was to reduce my BMI and become more fit so that I can trek more in the coming years, which many think is insanity. But one other person who thinks its important to be more fit is my Oncologist but more a friend Dr Selvi. Without her intiation and motivation , I wouldnt have dared to embark on tis thing called Paleo diet. She literally pushed me and herself into it and after taking enough guidance from another blogger who is into Paleo , we started on this journey and am very happy as I am seeingsome results already. So here is my humble attempt to document all recipes To start with is this lovely smoothie. Smoothie’s make a healthy filling breakfast. I saw some good big strawberries in the market recently and bought 2 boxes. The shop keeper said that it was from Lonavala and were more sweeter. Since dairy is in grey area in paleo, I have used coconut milk instead. Come back here to check out other vegetarian paleo recipes
Quantity of ingredients mentioned is for 4 servings
Coconut milk
(Fresh, I have used both
 thick and thin extract)
3 cups
1 tbsp

Grate the coconut. Transfer 1 cup to the jar of the grinder. Add 2 cups. Grind it. Filter the extract. Now add another cup of water and grind it again. Filter the thin extract also and keep it aside
Now add strawberries, banana, coconut milk and honey to the jar of the grinder. Grind everything together
Pour in glasses and serve

Can add crushed ice and serve chilled too
