Poached Pear In Plum Sauce

 This marathon I have tried to cook and explore different techinques used while cooking with fruit as a prime ingredient. While I was browsing UBF a facebook group, I came across this poached pear recipe by a restaurateur Nanda Gopa Rao. He has cooked this simple pear and presented it in a most exotic way with a very simple cooking called as OPOS , which is a concept started by Ramakrishnan.. I have reproduced it exactly the way it was cooked by Nanda gopa rao.
INGREDIENTS
Pear
1
Water
300 ml
Brown Sugar
150gms
Plum
2
Cinnamon
2” stick
Cloves
2
Cardamom
2
 
PREPARATION
Peel the skin of the pear. If the skin is very soft, then peeling is optional
Place everything in a 2 lt cooker
Close the lid and put the weight on
Cook on high for 11 whistles.(YES YOU READ IT RIGHT. 11 WHISTLES)
Switch it off and let the pressure release .
Open the cooker, carefully take out the pear, place it on the serving dish, drizzle the sauce and serve it with a scoop of icecream
