Parangikai Paal Kuzhambu

 I saw this paal kuzhambu done by Manjula On UBF and was surprised to see that milk was used in kuzhambu.She has cooked this with the easy pressure cooking technique and has taken the recipe from Kanamma cooks
INGREDIENTS
Ridge gourd(cubed)
2 cups
Shallots
1 cup
Sambhar powder
2 tsp
Daniya powder
1tsp
Turmeric powder
1/4 tsp
Asafoetida
1/4 tsp
Curry leaves
few
Oil
2 tsp
Water
2 tsp
Milk
1 cup
Salt
to taste

PREPARATION
Remove the skin and seeds of the ridge gourd. Cut into cubes
Remove the skin of the shallots and keep aside
Now take a 2lt pressure pan.
Put 2tsp oil and 2 tsp water at the base
Next put the shallots and curry leaves
On this layer it with the cubed ridge gourd
Next put turmeric powder, sambar powder, daniya powder and salt
Close it with the lid, put the weight on and cook in medium flame for 2 whistles. Let it cool down completely
Now add milk, mix well and cook on very low flame for 2-3 minutes

Serve hot with rice and curry
