Mangalore Buns

 This week I will be blogging about regional recipes and my chosen region is Karnataka. Mangalore buns is a type of fried bun which is mildly sweetish and is paired with coconut chutney.
INGREDIENTS

All purpose flour
1 ½ cup
Banana
1
Sour curd
4 tbsp
Sugar
3 tbsp
Coking soda
a pinch
Oil
2 tsp
Salt
To taste
Flour
For dusting
Oil
For deep frying
 
PREPARATION
Peel and cut the banana into small pieces. Grind it along with the sugar into a fine paste.
Take 1 ¼ cup of flour in a bowl. Add salt and cooking soda to this and mix well.
Add curd and mix well
Now add the banana puree and slowly mix it. Ad the ¼ cup flour and mix well. Do not add water, if needed add more flour
Add oil and knead it well so that it becomes pliable.
Cover it loosely and let it rest for 3-4 hours
Deep oil in a deep pan
Pinch small lemon sized balls from this dough
Roll each into a thick poori
Deep fry in hot oil and when it starts to brown, flip on the other side and let it fry well to
Remove with a slotted spoon and drain it on an absorbent paper.

Serve warm with coconut chutney
