Stuffed brinjal In Microwave

 Recently my aunt brought this to our house. Though I am not a great fan of brinjal, the look of the dish tempted me to taste it and it was so delicious. So called her up this morning for the recipe and when she said that it was cooked in a microwave, I was happy as well as surprised. So here is the recipe stuffed brinjal by my aunt Lakshmi.
INGREDIENTS
Small brinjal
250 gms
Tuvar dal
2  tbsp
Bengal gram dal
2tbsp
Red chillies
4
Asafoetida
1/4 tsp
Daniya
4 tbsp
Fresh coconut
1/4 cup
Tamarind
1 small marble sized
Turmeric powder
ΒΌ tsp
Salt
To taste

PREPARATION
Take enough water in a wide mouthed bowl, add turmeric powder to this and 1 tsp salt to it. Mix well
Now slit the brinjal into 4 , making sure the bottom is not cut.
Slit all the brinjal likewise and put this into the turmeric water.
Now roast the tuvar dal, Bengal gram dal, daniya and red chillied in 1 tsp of oil till the dal starts to brown.
In the same pan roast the coconut for few second
Transfer all this to a mixer jar.
Add the necessary salt, tamarind and little water and grind it to a smooth paste.It should be thick and not runny
Now stuff it into all the slit brinjal and transfer it to microwave safe dish



Cover it with a microwave safe lid and cook it HIGH for 5 MINUTES

Now slowly removed the lid, and sprinkle the dilutes paste, mix well, close with the lid and again cook for 3 minutes in MICRO HIGH MODE.
Heat 1 tsp oil in a pan, add mustard seeds and asafoetida. When it splutters, pour this on the cooked brinjal. Mix well
Now cook for the final time WITHOUT THE LID in MICRO HIGH mode for 1 MINUTE

Serve warm
