This month Mireille is the host for Bread bakers and
she suggested we go with the theme of Stone fruits.Now that the market if
filled with luscious mangoes, I thought , this was the best time to use the
king of fruits in a bread.I love sweet bread and I love mangoes, so here is the
recipe for the delicious mango bread .
INGREDIENTS
All
purpose flour

3
cups
|
Vital
wheat gluten
|
1
½ tbsp
|
Salt
|
1
1/ 2tsp
|
Sugar
|
2tbsp
|
Mango
puree
|
1 ¼ tsp
|
Instant
yeast
|
1
½ tsp
|
Cinnamon
powder
|
1
tsp
|
Butter
|
2
tbsp
|
PREPARATION
In the bowl of the stand mixer, transfer all the
ingredients
Run the mixer on MINIMUM speed till everything comes
together
Now increase the speed to SPEED 1, for 7 minutes and
you will have a soft pliable dough
Transfer this to a well greased bowl, cover it and
let it rise for 1 hour or till it doubles
Now take out the dough, punch it to remover the air,
roll it into a loaf and transfer it to a greased 8” loaf tin.
Cover it loosely and let it rise again in the loaf
tin.
Preheat the oven to 200 C
Bake the loaf for 30-35 minutes or till the bread is
done
Tranfer this to a wire rack and let it cool
completely before you slice the bread
Serve with butter and jam, I served the bread with some delicious caramel!!
