Baigan Bharta






The second eggplant dish of the week is the simple baingan bharta. Not very spicy and goes well with roti and can be prepared in no time.Every household will have their own recipe and here is mine
INGREDIENTS
Big eggplant
1
Green chillies
3
Ginger
1/2” piece
Oil
2tsp
Cumin seeds
½ tsp
Onion
1
Salt
To taste

PREPARATION
Roast the brinjal in open flame. When completely cool, remove the skin, Mash it well and keep aside
Chop the onion and green chillies finely
Heat the oil in a pan, and add the cumin seeds. When it starts to sizzle, add the chopped onion and green chillies. Saute well till the onion becomes transparent. Now add the chopped ginger and saute for a minute
Add the mashed brinjal and salt, mix well, cook for 2-3 minutes and switch off the fire
Switch warm with roti of your choice
