for this month, I chose to blog about healthy dinner recipes.We are
typical madrassi’s with a great affinity to have rice based dishes, But for
some time now we have moved to chapathi and roti for dinner hoping that it is a
healthier option. Our typical dinner is chapathi with a subzi, a glass of
buttermilk and some fruits.

Soak the cashew in warm milk
Slice the onions
Cut the tomatoes in large pieces
Remove the skin of garlic and ginger
Heat 2tsp oil in a pan
Now saute the onions and garlic till it charges colour
and the raw smell disappears
Now add the tomatoes and continue to cook till it
becomes a little mushy
Now add the turmeric, chillipowder, coriander and
cumin powder and continue to cook on a low flame for 5 minutes.
Switch off the fire and let it cool completely
Now transfer the cooked onion and tomato mixture to
the jar of the mixer.
Add the giner to this and grind it into a smooth
paste
Grind the cahew milk mixture into a smooth paste too
Now heat the same pan with the reaining oil on a low
heat
Pour this ground onion tomato mixture into it. Add
salt, garam masala and mix well
Add enough water to make it into the required consistency
and quantity
Add tofu and let it cook for few minutes
Now add the cashew paste and kasuri methi, mix well . Let it cook for 2
minutes. Switch off the fire
Serve warm with chapathi/ pulka/ roti
