Potato Gnocchi with sundried tomato Pesto

For the second day of Italian cuisine it is Gnocchi. These are dumplings made out of potato a little flour and seasonings which are cooked in hot water and then sautéed with some spicy sauce
FOR THE POTATO GNOCCHI
Boiled potatoes
4
All purpose flour
4tbsp
Salt
To taste
Pepper powder
1tsp
Oil(for boiling the gnocchi)
 1tbsp
Salt(for boiling the gnocchi)
1tsp

FOR THE SUNDRIED TOMATO PESTO SAUCE
Sundried tomato
1/2 cup
Walnuts
1/4 cups
Olive oil
2tbsp
Salt
to taste

SEASONINGS
Chilli flakes
2tsp
Italian sesonings
2tsp
PREPARATION
Soak the sundried tomatoes in warm water for ½ hour or more
Combine the mashed boiled potato, salt, pepper powder, and all purpose flour in a bowl. Knead well without adding any water
Make small equal sized balls from this
Boil plenty of water in a large pan with 1tbsp oil and 1tsp salt
Now drop these balls into it and let it boil
When the balls come to the surface of the water, it shows that the gnocchi has been cooked
Drain it and pour cold water on it
Drain again and keep aside
Meanwhile Grind the soaked tomato, walnut, olive oil and salt in a mixer to a fine paste
Heat a little olive oil in a pan and add this ground sundried tomato paste , chilli flakes and Italian sesonings
When it starts to boil add the cooked gnocchi
Mix well, cook for 2-3 minutes

Serve warm
