Vegetable Baked Bean Enchilada

 Here is the final Mexican dish for the week which has a tortilla base.The filling can be any vegetable sautéed or just baked bean too. I like to add them both and as it makes it a filling dish . There is a burst of flavours with each mouthful. Make these at home easily and satisfy your tastebuds
INGREDIENTS
Corn tortillas

Baked bean
1/2 cup
Bell pepper
1
Onion
1
Mexican seasonings
1tsp
Mozarella cheese
Generous helping
Hot tomato sauce
3/4 cup
Salt
 To taste
Oil
1tbsp
To Make the sauce
Garlic paste
1/2 tsp
Onion
1
Tomato puree
1/2 cup
Chilli flakes
1tsp
Mexican seasonings
1tsp
Salt
To taste

PREPARATION
Heat oil in a pan and saute the onion and bell pepper. Now add the baked bean and salt with seasonings
Cook till the moisture is absorbed. Let it cool
Preheat the oven to 180 C
Place the tortilla on the work surface
Place a little filling in the center of each tortilla
Roll it tightly
Spread some sauce on the bottom of the serving dish
Place the stuffed tortilla on it
Spread some more sauce on the top
Top it with mozzarella
Bake till the cheese melts

Serve warm!!
