Herbed Garlic Braided Bread

Do you like the flavour of garlic and breads like my daughter? Then try this bread. It is that bread which is perfectly soft, flavoured, savoury and can be relished with a delicious dip. I served it with a creamy tomato cheese dip and my daughter says it is perfect for the cool weather Chennai is now experiencing
INGREDIENTS
Minimally adapted from here

All purpose flour
2 cups
Gluten
1tbsp
Instant yeast
2tsp
Sugar
1tsp
Salt
1/4tsp
Garlic
5 cloves
Fresh thyme
few sprigs
Oregano
1tsp
Pepper powder
1tsp
Italian seasoning
1/2tsp
Olive oil
2tbsp
Luke warm water
1/2 cup-3/4 cup

PREPARATION
Chop the garlic finely.
Take out the leaves alone from the thyme sprig and keep aside
Mix the flour, instant yeast, sugar, salt, thyme, oregano, pepper powder, Italian seasoning, and garlic in a bowl
Transfer this to the bowl of a stand mixer and run in MINIMUM simultaneously adding the water so that it forms dough. I had to use ¾ cup of water. You add the ½ cup water and then check for consistency and use more water if necessary
Add olive oil and knead for another minute
Now increase the speed to ONE and run the stand mixer for 7 minutes and you will have soft pliable dough
Transfer this to a well-oiled board, Cover it and let it rest in a warm place for 1 hr for it to double
After an hour, take it down, transfer this to a working surface and divide the dough into 3 portions
Roll each portion into a rope of equal length
Start braiding it like this
Transfer this braided loop to a prepared baking tray.
I always line my baking tray with parchment paper; you can choose to grease it too
Cover it loosely with a kitchen towel and let it rest in a warm place to double again. This took approximately 45 minutes
Preheat the oven to 180 C
Apply milk all over the surface to get that golden colour or use egg wash
Bake the braid for 20 minutes or until it gets a golden colour
Transfer this to a cooling rack

Serve warm with a dip of your choice. I serve it with creamy tomato cheese dip
