and the one with egg too. But here is an easy fruit cake recipe. Perfect for Christmas
and new year
INGREDIENTS

purpose flour

Yogurt

brown sugar

1/2tsp+1/4tsp

Hot
water

Vegetable

essence

Jeera powder

1/4tsp

Cinnamon
powder

Dry
ginger powder

1/4 tsp

Clove
powder

Nutmeg

Lemon
zest

fruits

2 cups

Orange
Juice

PREPARATION
Soak the dry fruits in orange juice the previous night.
Preheat the oven to 160 C.Grease a 6” cake tin and
lineit with parchment paper
Sieve the flour with shahjeera powder, cinnamon
powder, ginger powder, clove powder and nutmeg powder. Keep aside
Ina bowl add the yogurt and brown sugar and beat
well
Add baking powder, ½ tsp baking soda and vinegar and
mix well. Keep it aside for 5 minutes and you will see bubbles appear at the
top
Now add the vegetable oil,vanilla essence, lemon
zest and mix well
Fold in the flour into the batter
Sprinkle 2 tbsp of flour on the soaked fruits , mix
and then fold the fruits onto the batter
Just before pouring the batter into the cake tin,
dissolve 1/4tsp of baking soda in 2tbsps of hot water and pour this mixture
into the batter and fold it making sure you are not over beating it
Pour it into the prepared cake tin and bake it for
40-45 minutes or till the skewer comes out clean
Cool completely and then slice!
