Eggless Fruit Cake

I have already blogged about the eggless fruit cake and the one with egg too. But here is an easy fruit cake recipe. Perfect for Christmas and new year
INGREDIENTS

All purpose flour
1 ½ cups
Yogurt
1 cup
Dark brown sugar
1cup
Baking powder
1 1/4tsp
Baking soda
1/2tsp+1/4tsp
Hot water
2tbsp
Vegetable oil
1/3 cup
Vinegar
1tbsp
Vanilla essence
1tsp
Shah Jeera powder
1/4tsp
Cinnamon powder
a pinch
Dry ginger powder
1/4 tsp
Clove powder
1/4tsp
Nutmeg powder
a pinch
Lemon zest
1/2tsp
Dry fruits
2 cups
Orange Juice
 1 ¼ cup


PREPARATION
Soak the dry fruits in orange juice the previous night.
Preheat the oven to 160 C.Grease a 6” cake tin and lineit with parchment paper
Sieve the flour with shahjeera powder, cinnamon powder, ginger powder, clove powder and nutmeg powder. Keep aside
Ina bowl add the yogurt and brown sugar and beat well
Add baking powder, ½ tsp baking soda and vinegar and mix well. Keep it aside for 5 minutes and you will see bubbles appear at the top
Now add the vegetable oil,vanilla essence, lemon zest and mix well
Fold in the flour into the batter
Sprinkle 2 tbsp of flour on the soaked fruits , mix and then fold the fruits onto the batter
Just before pouring the batter into the cake tin, dissolve 1/4tsp of baking soda in 2tbsps of hot water and pour this mixture into the batter and fold it making sure you are not over beating it
Pour it into the prepared cake tin and bake it for 40-45 minutes or till the skewer comes out clean

Cool completely and then slice!
