Eggless Chocolate Cake

One of the eggless cakes which has never failed me till date is this cake. A very simple cake but very moist and delicious.  This is a perfect cake for those whose need eggless chcocolate cake which is light, spongy and can be decorated with buttercream or fondant too.
INGREDIENT

All Purpose Flour
1cup
Baking powder
1/2tsp
Baking soda
1tsp
Cocoa powder
6tbsp
Sugar
3/4cup
Vegetable oil
1/2 cup
Instant coffee powder
1tsp
Hot water
1/4cup
Milk
1/4 cup
Yogurt
1/4cup
Vanilla Essense
1tsp


PREPARATION
Preheat the oven to 180C
Grease the 8” round baking pan and line it with a parchment paper
In a bowl sift the flour, soda ,baking powder and cocoa powder.. Mix well
Beat sugar,oil,instant coffee powder mixed with hot water,milk and yogurt till frothy
Now fold in the dry ingredients. Mix evenly
Pour it into the prepared tin
Bake for 30 minutes or till the toothpick inserted in the middle comes out clean
Transfer it to a wire rack. Let it cool
Once completely cool you can cut and serve
If decorating, let it sit overnight and next day you can cover it with ganache and pipe beautiful buttercream roses as shown
Note: This can be covered with fondant  and buttercream
If you do not have instant coffee powder use ¼ cup of hot coffee too
If you are planning to decorate the cake then do drizzle it with thin sugar syrup to keep it moist
