Peanut Capsicum Rice



 Going ahead with the theme for nuts and legumes for kids, here is a simple filling lunch box recipe with nuts. Easy and quick to make and very delicious too.
INGREDIENTS
Rice                 1 cup
Water               2 cups
Capsicum         1
Onion               1
Spice powder    2tbsp
Peanuts             3tbsp
Salt                    to taste
FOR THE SEASONING
Oil                     2tsp
Mustard             1/2 tsp
Curry leaves      few
Asafoetida         1/4 tsp
FOR THE SPICE POWDER
Urad dal                   2tsp
Roasted peanuts        1tbsp
Red chillies               3
Sesame seeds            1tbsp
Dessicated coconut    1tbsp
Oil                              1tsp
PREPARATION
Cook the rice in 2 cups of water. Let it cool
Heat 1 tsp oil in a pan and roast all the ingredients under the spice powder till the urad dal becomes brown.Let it cool. Then grind it into a smooth powder
Cut the onions and capsicum into small pieces
Heat oil in a kadai
Add the mustard seeds. Once they splutter add asafoetida , turmeric powder and curry leaves. Saute for 1 minute
Now add the onions and saute till it becomes transparent
Now add the cut capsicum and cook for 2 minutes
Now add the fresh ground spice powder, mix well , add very little salt, cook for 1 minute. Switch off the fire
Now transfer to a big bowl or a plate. Add the cooked rice to this. Mix well. Taste it and then add the required amount of salt. put the peanuts reserved for this and mix well
Serve with raita or papad
