Curd rice in hot summer is a must in the lunch box of my kid. Summer is quite harsh here and the curd rice does have a soothing effect on your body. But the trick is to mix it in such a way that the the curd does not turn sour. So here are some simple tips to make delicious curd rice.
Cooked rice 1/2 cup
Milk 1/4 cup or more
Mustard 1/2 tsp
Asafoetida 1/4 tsp
Fresh cream 2tsp(optional)
Green chilly 1(Optional)
Curry leaves few(Optional)
Pomegranate few seeds(optional)
Salt 2 pinches
Cook the rice with more water than you regularly cook. It should be mushy.
Add the milk and mash it well.
Now add the fresh cream and the little curd.
Now heat oil in a pan.
Add mustard seeds, once the splutter add the asafoetida, grated carrot and green chilly.
Saute for a minute and switch off the fire
Add it to the prepared rice
Mix in all the other ingredients
Mix well and pack the lunch box with any vegetable or a pickle
Add more curd only if you are planning to eat it immediately
The ingredients that are mentioned as optional are not necessary for a kids lunch box but when added do give a lovely taste and flavour
Addition of fresh cream makes it rich and tasty
Some add a little butter too
