Planning and preparing for the lunch box is something every mother dreads to. We need to keep in mind the nutrition the child needs, the ease of preparation and the ease with which the child can carry it and relish it too. So for the next 3 days, I will be blogging about some of the dishes that my child takes in her lunch box.
INGREDIENTS
Baby potatoes 10
Onion 1 large
Green chillies 2
Basmati rice 1cup
Turmeric powder 1/4 cup
Chilli powder 1/4 tsp
Coriander powder 1/2 tsp
Cumin powder 1/4 tsp
Garam Masala 1/2 tsp
Kasuri methi 1/2 tbsp
Ginger garlic paste 1tsp
Oil 2tsp
Cumin seeds 1/4 tsp
Fennel 1/4 tsp
Cardamom 2
Clove 2
Cinnamon 1/4"
Bay leaf 2
Lemon juice from 1 lemon
Salt to taste
PREPARATION
Though the ingredients are many, it is easy to prepare
Wash and soak the rice in water for 10 minutes
Slice the onions thinly
Heat oil in a pressure pan
Add the cumin and fennel seeds, then add the cardamom, clove, cinnamon and bay leaf
Once they start sizzling, add the green chillies and saute for few seconds
Next add the sliced onion and saute till it starts to brown
Now add the ginger garlic paste and saute for 1 minute
Now add the peeled potatoes and continue to saute for 1 minute
Add turmeric, chilli, coriander, cumin powders and saute till a nice flavor comes out
Time to add garam masala and the rice,
Mix well add 2 cups of water, salt and lemon juice
Sprinkle the kasuri methi, mix well
Put the lid on and pressure cook it for 3 whistles.
Switch off the fire and let the pressure subside
Mix well and back it in the lunch box with either a raita or fried papad!!!
