Nellikai Orugai / Gooseberry Pickle

It feels good to  back to blogging after a  long time and with a pickle with is a must in most soouth indian homes.According to Organic facts, the health benefits of Indian Gooseberry, also known as Amla, can be partially attributed to its high vitamin-C content. Amla enhances food absorption, balances stomach acid, fortifies the liver, nourishes the brain and mental functioning, supports the heart, strengthens the lungs, regulates elimination, enhances fertility, helps the urinary system, increases skin health, promotes healthier hair, acts as a body coolant, flushes out toxins, increases vitality, strengthens eyes, improves muscle tone and, acts as an antioxidant.
INGREDIENTS
Gooseberry/Amla      5 cups
Chilli  powder            1 cup
Salt                            1/2 cup
Turmeric powder       2 tsp
Fenugreek powder     1 tsp
Oil                             1/2 cup
Mustard seeds           1tsp
Asafoetida                 1/2 tsp
PREPARATION
Boil Nellikai in water till it starts to break open and seeds come out
Drain it, remove the skins andmeasure the sections of nellikai and keep aside
Heat oil in a wide pan, add mustard seeds and when starts to splutter add the asafoetida and saute for a minute.
Now add the boiled gooseberry, turmeric powder, chilli powder and salt and saute for few minutes
Sprinkle the fenugreek seeds and continue to saute for another minute
Now add 3/4 cup of boiling hot water to this, mix well and switch off the fire
Perfect pickle is ready!!
