Zaatar Paneer Swirl Bread

It is been long time since I baked a bread and my daughter suggested that I bake a savoury one for dinner. After eating the Zaatar flat bread, she always wanted me to bake another bread with the same flavouring. Hence decided to add the zaatar and paneer and make a swirl bread and she loved it.

All purpose flour                         2 cups
Instant yeast                                2tsp
Salt                                            1tsp
Sugar                                          1/2 tsp
Water nearly                                1 cup
Olive oil                                       1 tbsp
Zaatar  mix                               3 tbsp
Olive oil                                     2 tsp
Paneer                                        100 gms
Mix everything except oil to form a soft smooth Dough
Now add oil and knead again(10 minutes)
Transfer this to a greased bowl. Cover it loosely and let it double in volume.(Nearly 1hr)
Take the dough out, roll it into 1/4'' rectangle
Mix the Zaatar spice and olive oil togther. Mash the paneer lightly and keep aside
Now apply the zaatar mix on the rolled paneer, sprinkle the paneer all over
Start rolling from the longer side of the rectangle into a log
Pinch both sides
Keep the seam side down and place this on a greased tray. Let it rise for another 30 - 45  minutes
Preheat the oven to 180C
Make small slits on the loaf, brush with milk, sprinkle some sesame seeds and bake it for 20- 25 minutes or till it is done
Serve warm!!!
