Espresso Chocochip Shortbread cookies

For the third week of Fondbites Bake-a-long, Subhasini decided that we bake these delicious cookies. These are very easy to bake and the lovely yummy coffee flavour is perfect for a coffee lover like me. The dough was a little difficult to handle as it was very sticky, but firmed up when kept in the fridge for an hour.If it was only the espresso flavoured cookie, I am sure my daughter wouldn't even have lad a look at it, but the cookie has loads of chocochip to satisfy her too:-)
INGREDIENTS
Recipe Source: Sailusfood 
All purpose flour           2 cups
Butter                              1 cup
Icing Sugar                     3/4 cup
Instant coffee powder    1tbsp
Boiling water                  1tbsp
Vanilla                             1/2 tsp
Salt                                   1/4 tsp
Chocochips                      3/4 cup
PREPARATION
Sift the flour and salt together
Add the instant coffee powder to the boiling water and mix well. Keep it aside
Beat butter and sugar till creamy
Now add the coffee mixture and beat again
Add the vanilla extract and continue to beat
Now fold in the flour mixture and mix well
Next add the  chocohips and mix well. This dough will be very sticky.
Bring all the dough together into a ball, wrap in a cling paper and keep it in the fridge for an hr and you will notice that it firms up
Next preheat the oven to 175C
Take the dough out, knead for a second, flour the work surface liberally, roll the dough into a 1/4" rectangle, cut with cookie cutter.. place each cookie a little apart from each other on a prepared cookie tray. (Either grease it or lay a parchment paper on it)
Gather the remaining dough, roll it again and cut the rest of the cookies
Bake them for 20 minutes.
Serve them with hot cup of coffee!!!
