When Subhasini announced that we will be baking DDL Brownies for this week, I knew it would bake it immediately...Having a chocoholic at home has it own advantages:-).Subhasini has given an excellent tutorial for the recipe and I loved the way she has given a pictorial for lining the tin. Hop over to her log to see this. The Dulce de leche is prepared by the tutorial shown by Divya. Everything was easy except that I had a fear like many others that my cooker would explode while cooking the condensed milk. Nothing of that sort happened. It was as easy as cooking rice:-). So here is quick delicious brownie!!!!
INGREDIENTS
FOR THE DULCE DE LECHE
Condensed milk 1 tin( I used Amul Mithai Mate)
PREPARATION
Fill the pressure cooker upto half its capacity( the tin should submerge)
Close with the lid of the cooker.
Place the tin in it and see to it that the tin is submerged
Switch on the fire and heat the cooker, close the lid of the cooker,and when the steam starts to come out, put the weight on and cook till 1 whistle, then reduce the flame and cook for another 30 minutes.
Switch off the fire and let it cool
Once cooled, remove the tin from the cooker and now let this cool completely
Open the tin and what you see is a lovely golden coloured DDL!!!
FOR THE BROWNIE
All purpose flour 1/2 cup
Butter 1/2 cup
Brown sugar 1 cup
Cocoa powder 1/3 cup
Baking powder 1/4 tsp
Salt a pinch
Eggs 2
Dulce De Leche 1 cup
Vaniila extract 1tsp
PREPARATION
Preheat the oven to 175C
Line an 8" Baking tray as shown by Subhasini
Melt the butter in a saucepan. Let it cool for 5 minutes
Seive the flour, baking powder,cocoa and salt together
Now beat sugar and butter together. It doesn't matter if the sugar does not dissolve completely
Add the eggs , one at a time and beat well after each addition
Add the essence and whisk again
Now add the flour mixture and whisk well. Do not over beat
Now transfer half the batter into the prepared tin
Put half the DDL randomly all over it and swirl with a toothpick
Next pour another layer of the remaining batter, top it with the remaining ddl , swirl with a tooth pick again.
Tap it slightly on a table so that it levels .
Bake it for 35-40 minutes or till the center firms up
Remove it and let it cool completely on a wire rack
Cut only when it has cooled completely. Store in airtight box
It stays good for 3-4 days outside, upto a week in the fridge and a month in the freezer
