For the third day of Instant Dosa for BM#34, I have prepared a very healthy dosa which tastes delicious as well.
Barley flour 1/2 cup
Foxtail millet flour 1/4 cup
Wheat flour 1/4 cup
Water 1 1/2 cup
Salt 3/4 tsp
Asfoetida a pinch
Oil to make dosa
Mix all the flours, salt together.
Add water to get the dosai consistency(It should be of dropping consistency, not thick or not very watery too)
Hat a dosai tawa, When sufficiently hot pour a ladle of batter in the center and immediately start spreading it in circular motion
Drizzle a tsp of oil around it and cook it in low flame till it brownd on the lower side.
Now flip it and cook it for 1 minute on the other side too
Make all the dosai's the same way
Serve warm with Chettinad Chutney
