Whole Wheat Multiseed Bread

Hi
Today October the 16th is observed as the World Bread day .When the announcement came up about the at Kochtopf.me about the world bread day , I decided to bake some healthy bread.Again this combination of whole wheat bread and seeds is inspired from my friend Uma who has been asking me if I have ever baked a bread with seeds. Guess it is the right time to bake some healthy bread.
INGREDIENTS
Whole wheat flour                                  2 1/2 cups
Salt                                                        3/4 tsp
Active dry Yeast                                     2 1/2 tsp
Sugar                                                     1/2 tsp
Olive Oil                                                2tbsp
Warm water                                            3/4 cup to 1 cup
Toasted pumpkin seeds                          1/3 cup
Melon seeds                                            1 tbsp
Cucumber seeds                                      1tbsp
Sunflower seeds                                       1tbsp
PREPARATION
Mix yeast with half the water and little sugar and set it aside to froth up
Mix all the seeds in a bowl
Sift the flour with the salt and in a bowl. Add half the quantity of the seeds being used
Now add the yeast water mixture to the flour and seed mixture and knead well.
Transfer this sticky dough to a wooden board, sprinkle little flour and knead till dough becomes pliable
Keep it covered in a well oiled bowl and let it rise(45-60 minutes)
Take it out, punch down lightly and shape it into a loaf and transfer this to a greased loaf tin
Sprinkle the rest of the seeds on the top and let it rest for another 45 minutes
Preheat the oven to 220C
Brush the loaf with milk(optional) and bake for 25-30 minutes
Transfer this to a wire rack and let it cool
Slice it and serve with some fresh home made marinara!!!!!
It a dense bread since it is made of whole wheat and the seeds added give a very nice crunch to it
Linking this to World Bread day!!
