Vegetarian Paella

 Paella is a valencian is a rice dish ans supposed to have originated in the east coast of spain. This is one of the sought after street foods of spain.It is a combination of rice, meat, vegetables and strongly flavoured with saffron. The rice that they use are either Bomba or calasparra which is a very short variety of rice.The rice resembles our own tomato rice expect for the flavoring  and the masala which we use.
By the way how did you pronounce it???Just like I did...pe-la?...No...again they say it differently:-).

INGREDIENTS

Onion                                    1
Garlic                                     1 clove
Red, green  peppers                1/2 each
Tomato                                   2
Vegetable broth                       1 1/2 cup
Saffron strands                       a few( soak it in 1 tbsp of warm water)
Chilli flakes                             2tsp
Thyme                                    1/4 tsp
Short variety rice                     1/2 cup
Olive oil                                  1tbsp
salt                                          as required

PREPARATION
Dice all the vegetables finely
Heat the oil in a pan
Add the onions and garlic to this, Saute till it becomes transparent
Now add the cut peppers ans saute in low flame for 1 minutes.
Add the cut tomatoes, the vegetable broth, rice, saffron mixed in warm water, thyme , chilli flakes and salt
Mix well and cook  covered till the rice gets cooked and all the liquid is absorbed
Serve warm!!!
