Nachos Supreme

This week I will be blogging about international cuisine. Yesterday it was a Jewish flat bread and today lets see the ever favourite Mexican dish. Kids love this and my kiddo loves it too though without the baked beans.Nachos are deep fried tortilla chips covered with either nacho cheese or salsa. Here is a recipe  for the tortilla chips with salsa

INGREDIENTS
Corn chips                        10-15
Salsa dip                           1/2 cup
Sour cream                       1 tbsp
FOR THE CORN CHIPS
Maize flour                       1/2 cup
All purpose flour              1/4 cup
Salt                                  a pinch
Oil                                  2 tsp
Oil                                   for deep frying
FOR SALSA DIP
Onion                             1
Tomato                           2
Green bell pepper             1
Sugar                             1/2 tsp
Oil                                  2 tsp
Oregano                         1/2 tsp
Chilli powder                  1tsp
Salt                                to taste

PREPARATION
FOR THE CORN CHIPS
Mix both the flour and salt. Add little warm water and knead it into a smooth dough. Apply oil and knead again. Keep it covered.
Pinch small equal balls from this. Roll them into thin discs dusting with all purpose flour.
Prick all over with fork
Deep fry in hot oil till they are crisp . Drain them and after they cool down , store them in an air tight container.
FOR THE SALSA DIP
Prick the green pepper with a wooden skewer and roast till on fire till the skin turns black.Take it off the fire and let it cool. Remove the charred skin and cut it into fine bits.
Blanch the tomatoes in hot water, remove the skin, cut into fine pieces
Cut the onions finely
Heat oil in a pan and add the cut onions, saute well. When it turns transparent add the cut green pepper and saute for 1 minute
Now add the blanched tomatoes and mix well. Continue to cook in medium flame.
Add the chilli powder and salt and mix, Cook till there is no moisture.
Now sprinkle the oregano and sugar,Mix well. Switch off the fire.
ASSEMBLING THE NACHOS
Place corn chips on a plate
Keep a spoon full of salsa on each corn chip
Top it with a drop of sour cream
Enjoy this lovely snack
