My daughter was giving me a weird look as I sat
contemplating on the dish to be cook for the alphabet B. She gave me
some time(rather enough time) and when she couldn't hold herself
anymore, she came up to me and said..MA..I understand that you do not
remember your engineering subjects anymore, but don't tell me that you
have forgotten the sequence of english alphabets too. Only then did I
understand her look at me:-)...well...this has been happening for
sometime now, that I open the notepad and start reading out the
alphabets...trying to figure recipes but she could hear only
A,B,C.....and felt that OMG moment:-)...heheh...Anyway coming to the
recipe, today I am hopping on to Gujarat for this delicious curry
INGREDIENT
Bhindi/Lady's Finger 1/4 kg
Asafoetida 1/2 tsp
Oil 1tbsp
FOR THE STUFFING
Green chilly -ginger paste 2tsp
Coriander powder 2tsp
Cumin powder 2tsp
Garam Masala 1/4tsp
White sesame seeds 2tsp
Fresh coconut 3tbsp
Peanuts 2 tbsp
Jaggery 2tsp
Oil 1/2 tbsp
Salt to taste

PREPARATION
Wash the bhindi's and dry them. Cut the edges and keep aside
Grind coarsely all the ingredients that comes under stuffing witout any water
ake a slit in the center of the bhindi, making sure the bhindi is not cut into segments
Fill the stuffing in each bhindi
Add oil to a microwave safe bowl and arrange all the stuffed lady's finger in it
Close it with a micro safe lid and cook in MICRO high for 5 minutes
Open the lid, mix well and again cook in MICRO HIGH for 2 minutes without a lid.
(Since I wanted it a little crisper , I cooked it further )
Lovely delicious Bhindi ready to be served with rice but my daughter finished the whole plate as if it was a starter:-)
You can cook this on a stove top too.
Heat a pan with oil. Add asafoetida and then the stuffed veges.Close and cook for 5 minutes, Turn them once and continue to cook without a lid for another 10 minutes.
