Cabbage Rice

For the day 2 of Blogging Marathon#31 under the theme of Main course, it is this delicious Cabbage rice on my blog. A perfect one pot meal and suits best for the lunch box too.
Basmati Rice   1 cup
Water              2 cups
Cabbage        1 small
Onion            1
Oil                      1 tbsp
Lemon                1
Salt                     to taste
Coriander       1 bunch
Fresh coconut    1/4 cup
Cashew              10
Milk                    3tbsp
Green chillies       4
Ginger                1/4 " piece

PREPARATIONWash and soak the rice for 10 minutes
Soak the cashew in 3tbsp of warm milk for 10 minutes
Cut the onion and cabbage finely
Grind the fresh coconut,coriander ,cashew, chillies and ginger into a very smooth paste
Heat the oil in a pressure pan. Add cumin seeds and when it starts to sizzle  add the onions and saute till it starts to become transparent.
Now add the ground masala to this and mix well.
Now add the washed rice, water. juice from 1 lemon and salt
Mix everything thoroughly
Close the pressure pan and cook upto 2 whistles
Serve warm with Raita and pappad
