Brown Rice Kootanchoru

For the final week of Blogging Marathon, I chose to go with the theme  of Main course. Rice predominantly features in the main course of a typical south Indian kitchen and I am no exception in that. But some time it becomes quite routine with the usual rice, sambhar, rasam poriyal and everyone at home looks forward to a change. A change without much compromise on taste and the nutrients is what I want and kootanchoru -a perfect combination of lentils, greens and vegetables and the taste is too good .

Brown Rice               1 cup
Tuvardhal                  1/4 cup
Pumpkin                     few pieces
Raw banana                 1
Raw mango                  few pieces
Brinjal                          4
Arai Keerai                  1 bunch
Murunga Keerai           few sprigs
Tamarind                    1 small lemon sized
Turmeric powder        1/4 tsp
Curry leaves               few
Salt                      to taste
Shallots         6
Cumin seed    1tsp
Red chillies      8
Fresh coconut     3tbsp
Sambhar powder      2 tsp
Oil                        1tbsp
Mustard                1tsp
Black gram dhal     1/2 tsp
Asafoetida              1/4 tsp

Wash and soak the dhal in water for 30 minutes
Soak tamarind in 1 cup of warm water for 15minutes. Squeeze out and extract the juice and keep aside
Wash and clean the greens. Cut it into small bits. Cut all the vegetables into small pieces.
Grind together the shallots,cumin seeds,red chillies, coconut and saambhar powder into a smooth paste
Heat oil in a pressure pan. Add mustard to this hot oil and when it splutters add black gram dal and asafoetida and Turmeric Powder
Now add the ground masala and saute for 1 minute
Add all the vegetables and greens and mix well
Now add the tamarind water and let it boil for a minute
Add the washed rice and dhal. Sprinkle the salt and add the curry leaves now
Mix everything very well and close the pressure pan
Cook upto 3 whistles
Serve warm with chips/appalam and raita
