Vazhai Thandu curry/ Banana Stem curry

For the second day of BM#18, i have cooked another very healthy curry-Banana stem curry. The benefits of including this in our diest can be seen here. The only hitch is that is it a little time consuming to remove the fibres while cuting the stem but i guess the benefits are more to ignore this.
Banan stem(cut into small cubes)   1 cup
Salt                                            to taste
Oil                                             1 tsp
Mustard seeds                             1 tsp
Coconut scrappings                      3 tbsp
Asafoetida                                    1/4 tsp

Cut the stam and keep put it in a bowl with water mixed with 1 tbsp of curd.This will prevent the stem from blackening.
Drain out the curd water mixture. Close with a lid and microwave it for 5 mins in HIGH mode
Now heat a pan with 1 tsp oil, add the mustard seeds, When it splutters put the asafoetida in it and transfer all these to the cooked vegetable. Sprinkle salt, mix well and cook again for 1 Minute in HIGH Mode keeping it open.
Now add coconut, mix well an serve
