Coffee and chocolate...a lovely combo indeed!!!!Satisfies the chocolate craving of my daughter and coffee of mine.
All purpose flour 1 1/2 cups
Baking powder 1/2 tsp
Baking soda 1/4 tsp
Salt 1/2 tsp
Butter 1/2 cup(softened)
Sugar 1 cup
Buttermilk 100 ml
vanilla extract 1 tsp
Instant Coffee powder 1 tsp
Warm water 1 tsp
Chocolate chips 1/4 cup
Cinnamon powder 1 tsp
Preheat the oven to 170C
Grease A ring mould or pan. I used an 8" mould
In a large bowl sift together the flour, baking powder, baking soda and salt .
Mix the instant coffee powder with the warm water and keep aside.
Cream butter and sugar till it is creamy. Now add eggs and beat again. Add the vanilla and beat together.Time to add the coffee mixture and beat again.
Fold in the flour mixture in two batches.
Mix chocochips with a tsp of flour .
Fold in this chocochips in the batter
Transfer this to the greased mould and bake for 50-60 minutes or till done(test by inserting a skewer in the middle to come out clean)
