Persian Shorba

It is a while since I took part in Blogging Marathon which is initiated by Srivalli. I have chosen "Soups and Salads" as the theme for the first week of blogging.
So for day 1 it is Spinach Paneer soup.If you have had a chance to visit restaurant Mahamudra in chennai, then you will be familiar with their Patent soup -"the Persian shorba"We tasted it too and it was very yummy....The next day tried it......and ..Voila.......i made it too!!!It tasted pretty much similar and we had loads of it:-)

INGREDIENTS

Spinach 2 bunches

Carrot 2

Onion 1

Paneer 1/4 cup(grated)

Salt as required

FOR THE WHITE SAUCE

Milk 1/4 cup

All purpose flour 1 tbsp

Butter 1 tbsp

PREPARATION

Cut the carrot into pieces

Pick and Wash spinach leaves.Keep it side

Heat a pan/ cooker with 1 tsp of oil and saute the onion for 2 minutes.

Now transfer the onion, spinach, cut carrots to a pressure cooker. Add enough water and pressure cook it till everything is properly cooked. I cooked it till 3 whistles

After it cools down, transfer this to a blender and grind it into a very smooth paste.Add 2-3 cups of water to it and let it simmer on a very low flame for 5 minutes.Switch off the stove and let it cool.

In another pan heat the butter, and saute the flour till good aroma emanates. Now add the milk and make it into a smooth paste. Switch off the stove.

Mix this white sauce with the prepared soup. Mix well

Add grated paneer to this

Serve warm with a sprinkling of fresh ground pepper

This is a very healthy soup with a great flavour too:-)
