It is Day 2 of Blogging Marathon and the soup for the day is Carrot soup.As carrot is rich in Vitamins, antioxidants, minerals and dietary fiber, I try to use this in my daily menu and this soup is a regular:-)
INGREDIENTS
Carrots 4(medium sized)
Onion 1
Potato 1(peeled and cubed)
Milk 1/4 cup
Salt as required
Cream optional
PREPARATION
Pressure cook the carrots, Potato and onion upto 3 whistles.Let it cool down.
Once the pressure has been released transfer the carrots and onion to a blender and make it into a smooth paste
Heat a pan and add the puree to it. Add the required amount of salt and milk to it. Mix well. Add the water to bring it to the consistency of the soup.( I needed about 3 cups)This will vary as per our liking.Let it simmer for 5-8 minutes
Serve warm with a dot of fresh cream(optional)
