This is one of the regular rice dishes in my home. The lovely colour and the flavours are too inviting. If prepared in a microwave , it is all the more easy. I find it convenient to pack this off for my daughter's lunch box and she loves it too.
INGREDIENTS

Basmati rice 1 cup soaked in 3 cups of warm water
Water 2 cups(for cooking)
Onions 1 big
Fresh corn 3/4 cup
Cumin seeds 1 tsp
Garam Masala 2 tsp
Salt to taste
Oil 1 tbsp
FOR THE GREEN PASTE
Coriander leaves 1/2 cup
Mint leaves 1/2 cup
Cardamom 2
Cloves 2
Ginger 1/2 " piece
Garlic 2 cloves
Green chillies 2
PREPARATION
Heat 3 cups of water for 2 minutes.Soak rice in it for 10 minutes
Grind all the ingredients under the Paste with minimum water
Chop the onion finely
Heat oil in a wide mouthed microwave safe bowl. Add cumin seeds to it and heat it for 1 minute. Put the chopped onion into this and fry it on High for 2 minutes
Now add the paste to this.
Mix well and microwave it for another 2 minutes in MICROHIGH mode
Now drain the water and add to this cooked mixture. Also add the corn to this. Mix well
Pour 2 cups of water to this. Add salt and garam masala to it and mix well. Now close it with a Microwave safe lid(SHOULD NOT CLOSE IT TIGHT)Microwave it on HIGH for 10 minutes.
Take it out, mix lightly with a fork. Close the lid again and microwave it on HIGH for another 7 minutes or till the moisture is absorbed
Perfect Mint corn pulav ready to be served with a raita of your choice!!!!!!!!!!
