Day 3 of BM#4 by Srivalli and i am back with one more kid's delight.Children generally love street food and my daughter is no exception .One of the things that she likes the most is Pav bhaji.She makes it a point to eat this and paani puri when she visits Gangotri(chennai).Since her exams are on and i do not allow her to eat outside during her exams, i thought why not treat her with some home made street food:-)While searching for the recipe i came across this in Vah chef and decided to follow the recipe
INGREDIENTS
MAKES 8 BUNS
All purpose flour 3 cups
Active dry yeast 3/4 tsp
Sugar 1/2 tsp
Salt 1/2 tsp
Water 1/2 cups
Butter 3tbsp
PREPARATION
In 1/4 cup of water warm, sprinkle the yeast together with the sugar.Leave it aside for 10 minutes to froth up well.
Meanwhile in a wide mouthed bowl mix together the flour and salt.Pour the yeast mix to this and knead it well with enough water.
Transfer this dough to a wooden board and knead it for 10 minutes or so to form a very soft pliable dough.Cover it and let it rise for 60 minutes
Take out the dough and punch down the dough a little. Make small balls from this and arrange it on a greased tray, each ball touching each other. Cover it and again let it rise for 45 minutes.
Preheat the oven to 200C/400F
Bake it for 20 minutes or till it starts browning
Take it out and immediately brush it with butter
Soft pav ready to be served
FOR THE BHAJI
Potato 2 Big
Onion 2 medium
Green pepper 1
Tomato 2
Ginger chilli paste 1 tsp
Cut vegetable(beans, carrots, peas, cauliflower) 1 cup
Chilli powder 1 tsp
Pav bhaji masala 2 tsp
Cumin seeds 1/2 tsp
Turmeric powder 1/4 tsp
Chilli powder 1 tsp
Coriander for garnishing
Cut lemon pieces
Butter 1tbsp
PREPARATION
Boil the potatoes until soft. Peel and mash it.
Boil the other vegetables separately till soft or microwave it
Cut the onions and bell pepper finely
Heat 1 tbsp of butter
Add cumin seeds and when it splutters add the cut onions.Saute it till it turns transparent
Now add the chilli-ginger paste and saute it , add the capsicum and mix well.
When a good aroma comes out add the cut tomatoes .
Put the turmeric, chill powder in this with the salt and cook till the tomatoes becomes mushy
Add the vegetables, mashed potatoes, pav bhaji masala with 1/4 cup of water and mix well.
While it cook mash it with a wooden masher to give a homogeneous mixture.
when cooked fully (10 minutes or so in medium flame), switch off the stove and garnish it with fresh coriander leaves
SERVING
Cut the pav buns into 2. Toast it with butter or serve it as it is. Serve with cut onions, a slice of lemon and a whole cup of the delicious bhaji that you have prepared
Serve your kid fresh soft homemade pav bhaji and be sure of the adulation's to come!!!!:-)
